Carroty Mac & Cheese
From Epicurios:
ingredients
- 2 cups whole wheat macaroni
- 2 1/2 cups coarsely grated carrot (about 8 small)
- 3 cups grated sharp cheddar cheese
- 1/4 cup (1/2 stick) unsalted butter, cut into pieces
- 3/4 cup sour cream
- 1/4 cup whole milk
- 2 large eggs
- 1 teaspoon kosher salt
- 3/4 teaspoon mustard powder
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup finely grated parmesan cheese
preparation
1. Preheat oven to 400°F and grease an 8-inch square baking pan. Arrange a rack in the top third of the oven.
2. Cook macaroni according to package instructions in a large pot of salted boiling water; add carrot 3 minutes before pasta is finished cooking; drain well.
3. While pasta is hot, stir in all but 1/2 cup of the cheddar and the butter. In a bowl, whisk together the sour cream, milk, eggs, salt, mustard powder, and pepper. Fold mixture into the pasta.
4. Scrape the mixture into the prepared pan. Sprinkle the remaining cheddar and the parmesan over the top. Bake until the casserole is firm to the touch and golden brown, about 30 minutes.
What Else?
•If you're grating your cheddar cheese in the food processor, you don't have to wash out the machine before grating the carrots. Or vice versa.
•This is one of those macaroni and cheeses with an eggy custard base that puffs as it cooks, and is cut into squares to serve, like a casserole, as opposed to that gooey, creamy, stove-top béchamel sauce version. I know that some people have strong opinions about proper mac and cheese (I'm an equal opportunist myself), but thought I'd let you know what you're getting.
•Feed this dish to the kids as is; grown-ups should indulge with a squirt of fiery Sriracha or other hot sauce all over the top.
•You can vary the cheese to give this rather plain (if tasty) dish more personality. Gruyère, aged Cheddar, pecorino, and aged Gouda will all add a sophisticated allure that will raise it above mere kids' food

Apple Chips
From The Jew & The Carrot:
Homemade Apple Chips
4 medium-large apples (approx 1.5 pounds)
1 quart unfiltered apple juice or cider
2 cinnamon sticks
1) Preheat oven to 250 degrees
2) Combine apple juice and cinnamon sticks in a large pot with water and bring to a boil over medium-high heat.
3) While the juice is heating up, slice apples (no need to peel) - either slice on a mandoline, or with a sharp knife. I like them through the core so that you see the star shape where the seeds were. This part of the activity is best left to an adult, not a child.
4) Once the juice comes to a boil, add the apple slices and stir occasionally, for about 5 minutes.
5) Take out of the pot with a slotted spoon and place on paper towels or clean kitchen towels to absorb extra juice.
6) Spread the slices in a single layer on wire cooling racks and place in the oven. Bake for 30-40 minutes, or until light golden brown. If you don’t have cooling racks, place on a baking sheet lined with parchment and flip after 15-20 minutes.
7) Let cool completely and enjoy! Store in an airtight container if you have any leftovers.
- Serve any excess juice as a delicious hot apple cider!

Dinner club is this weekend & the theme is candy! So I'm trying my hand at the following two recipes:

Ingredients
- Black decorating sugar, for the glass
- Juice of 1 lime, plus 1 lime wedge
- 1/4 cup dark rum
- 1/4 cup ginger beer or all-natural ginger ale
- 1 black gummy spider
Directions
Spread out the black sugar on a small plate. Rub the lime wedge around the rim of a rocks glass; dip the glass in the black sugar, then fill with ice.
Combine the rum and lime juice in a cocktail shaker. Fill with ice and shake well. Carefully strain into the glass, minding the sugar on the rim. Top the drink with ginger beer and add the gummy spider.

Ingredients
- 1-1/2 cups cold 2% milk
- 1 package (3.4 ounces) instant vanilla pudding mix
- 1 carton (8 ounces) frozen whipped topping, thawed
- 4 large apples, chopped (about 6 cups)
- 4 Snickers candy bars (2.07 ounces each), cut into 1/2-inch pieces (due to a peanut allergy in the home we are eating at, I am substituting Milky Way bars for the Snickers)
Directions
- In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in whipped topping. Fold in apples and candy bars. Refrigerate until serving. Yield: 12 servings (3/4 cup each).

3/4 cup equals 218 calories, 9 g fat (6 g saturated fat), 6 mg cholesterol, 174 mg sodium, 31 g carbohydrate, 2 g fiber, 3 g protein.

Indian Harvest
This week I had the opportunity to do to a food demonstration by a Chef from Indian Harvest company. It was a brunch filled w/whole grain items, including yogurt parfaits, salads & main dishes. It was very interesting & I got some great ideas on items for the menu for next year. It was put on for the chefs at the main kitchens for the college, so it was a real treat for me to be able to go!! Networking at its best!

Your New Normal Is
Gluten Free apparently. Should be interesting as next year, your favorite sorority chef is also going gluten free. I started now, but at this point, am just not eating what the girls are, or am modifying & eating what I cook for my Gluten Free Girl at the house.
Today was a food show. And it sucked. Because I saw lots & lots that they would like & lots & lots that I couldn't try for them. So Gina, my handy assistant, tried most of what I asked her too. I got a couple of "no, I won't eat that" but for the most part she was game. Some good news is I found gluten free stock so when I make soups & stews or need it for anything, we're good!
I don't know how I feel about this whole Gluten free crap. Honestly, I don't know if it's doing anything or it's the fact that I'm back on my homeopathic remedies. I just know that it's been as bad as it ever gotten over the past few weeks. And I am willing to try anything to make it stop. Back on the remedies so it's too soon to say if it is the gluten or not. But the fact that Beer Fest about killed me & the fried chicken bothered me....it kinda makes me wonder now.
I guess I'll go for awhile & see how things shake out. If I continue to feel good, I'm not sure I'm willing to risk yet another relapse & gluten myself to find out. Honestly, it's just not worth the pain.

I got a couple of "no, I won't eat that" but for the most part she was game. Some good news is I found gluten free stock so when I make soups & stews or need it for anything, we're good!
I don't know how I feel about this whole Gluten free crap. Honestly, I don't know if it's doing anything or it's the fact that I'm back on my homeopathic remedies. I just know that it's been as bad as it ever gotten over the past few weeks. And I am willing to try anything to make it stop. Back on the remedies so it's too soon to say if it is the gluten or not. But the fact that Beer Fest about killed me & the fried chicken bothered me....it kinda makes me wonder now.
I guess I'll go for awhile & see how things shake out. If I continue to feel good, I'm not sure I'm willing to risk yet another relapse & gluten myself to find out. Honestly, it's just not worth the pain.
