World's Best Granola

Seriously.  My kids wanted it for dessert.  Thank you to Charlie for sending it to me! I am now an Alton Brown fan!  The only modifications I did were to use dried cranberries instead of raisins [dried cherries was also listed as an alternative by Charlie] and I added 1/8 cup of flax seed.

Ingredients


  • 3 cups rolled oats
  • 1 cup slivered almonds
  • 1 cup cashews
  • 3/4 cup shredded sweet coconut
  • 1/4 cup plus 2 tablespoons dark brown sugar
  • 1/4 cup plus 2 tablespoons maple syrup
  • 1/4 cup vegetable oil
  • 3/4 teaspoon salt
  • 1 cup raisins

Directions

Preheat oven to 250 degrees F.
In a large bowl, combine the oats, nuts, coconut, and brown sugar.
In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

  1. I will have to try the granola bars, but I think I've already found our favourite granola! Don't love coconut and all the little bitty things... plus, mine (from Tightwad Gazette) bakes super-fast and offers the goodness of powdered milk!

  2. I don't typically like coconut either, so I was skeptical, but toasting it like that made it really yummy. I will check yours out. :) I usually eat it with vanilla yogurt or on top of ice cream, so the dairy is there for us. :)
